I mostly stick with Mercuriall, Lepou stuff, and Guitar Rig these days. Amplitube's too bright and fizzy for my tastes, although it can sound good on bass.
I am at the point in appreciating the quality of amp sims to where I will run direct if there is any concern that I am not sure how I ultimately want the tone to sound on the recording. I'd say I was still 75% of the time using real amps 5 years ago, now about 30%. If the song is already solidly arranged and all, I will still mic up an amp as it is a bit easier for me to tweak. I use paid Amplitube Fender - good job on Fender tones. Uses amp models I'm familiar with in real life, so it makes it easier for me to find the tone I'm looking for. S-Gear - Scuffham Amps - I can get heavy tones I like easier here. Kuassa Creme & Vermillion - really easy to tweak to get a wide range of sounds. I still probably haven't 'learned' these amps that well. free Ignite, LePou - good quality, probably almost as many different tones as the above, but in different plugs. I frankly am happy to have paid for the convenience of all the amps being in one plugin. I dont always feel the speakers/mic settings sound that dynamic on Amplitube, S-Gear, or Kuassa. I sometimes bypass them and use Recabinet. I also don't often use the onboard reverbs. I think SpringAge by Overloud and SpringBox by PSP are more realistic.
I use amp sims almost exclusively both recording and live. PodFarm is good enough for me. I haven't honestly done a whole lot of comparison with other software sims, mostly because I've kinda already invested in the Line6 stuff and I'm perfectly satisfied with what I've got.
I use the POD farm with powerpack add-on and freebies sometimes, like not very recent ones like Lepou, 7170, dirthead or Tamla. POD farm's high gain models are tricky to use for me - so I like to use freebie metal ones for it, as they're somewhat easier to control. I'm pretty sure any of modern amp modellers are usable, you just need to know how to set them up and fit in the mix. Beats the cheap solid state amps most of us were sentenced to use twenty years ago for sure :)
